Vegetarian soup with mushrooms
Solyanka is a thick, sweet and sour soup of Russian origin revered for its multitude of flavours and qualities. Our vegetarian version is a healthy, quick and affordable alternative to the traditional one, while still very tasty and appealing!
The base of our vegetarian Solyanka consists of green cabbage and oyster mushrooms. Both are low in calories yet very nutritious and delicious!

Step-by-step preparation instructions
1 Cut carrot and red bell pepper into thin strips and sauté in butter until lightly browned.
2 Grate the flesh of the tomato and discard the skin. Add to the sautéing vegetables and continue cooking until all moisture is evaporated.
3 Thinly shred cabbage and cut mushrooms into small pieces. Add to a medium pot and cover with water. Add sautéed vegetables, bay leaf, dried parsley root, dried herbs, salt and honey. Bring to a gentle boil on medium heat, making sure the water does not evaporate too quickly. Boil gently for 10 minutes, remove from heat and sprinkle with freshly grated black pepper. Cover and let sit for 2-3 minutes to infuse flavours.
