The Caesar Salad is a well-known and much-loved salad that has become popular all over the world ever since it was first created by an Italian-American restaurant owner who had to scramble for left over ingredients to feed an unusually large crowd during a July 4th celebration.

Today we present to you a delicious and nutritious vegetarian version of this famous salad, by adding roasted chickpeas instead of meat or seafood. Chickpeas have a pleasant nutty taste and a soft buttery texture. They are very rich in vitamins and all essential amino acids.

Vegetarian caesar salad with chickpeas - Step-by-step preparation instructions

1 Preheat the oven to 350° F/180° C. Mix cooked chickpeas with butter, curry powder, salt and pepper. Layer onto a baking sheet lined with parchment paper and roast for 15 min.

2 For the dressing, place yogurt into a small bowl and add mustard, lemon juice, salt and pepper. Mix well until uniform.

3 Take a large serving bowl. Cut or rip salad leaves into bite-size pieces.

4 Cut the cherry tomatoes in half and add to the bowl.

5 Pour the dressing and mix well.

6 Sprinkle with roasted chickpeas and croutons and mix gently.
